Pizza on the grill! I made the sauce from scratch with herbs from the garden, and it was topped with monteray jack cheese, bacon, chicken and basil. I have a feeling I will be grilling all of my pizzas from here on in.

Clams with white wine butter sauce. I made these for mother’s day (along with stuffed lobster) and they were fabulous. I used Cupcake Winery’s Pinot Grigio, which was also served with dinner.
Although my bro and I bought 3 bags of clams and I ate so many that I’m off of clams for a bit.
I took a cooking class last weekend and this was what we made.
Salmon with white wine dill sauce.
Veggie Summer Rolls with sweet chili dipping sauce.
Green beans and white beans with parmesan.
Chocolate towers with white chocolate mousse and wild berry coulis.
It was interesting to cook with other people in an educational atmosphere, but it’s something I’m sure I will do again.
—10” bottom tier: Almond cake with cannoli filling and toasted almonds.
8” top tier: Empress Chocolate Cake with swiss buttercream.

The McGinty Pizza.
Thin slices of potato, sauce, mozzarella, and topped with corned beef that was slow cooked for 12 hours.
The round pizza used this dough, made with my bro’s homebrewed beer.
The sicilian was a beer and whole wheat dough from some recipe my mom handed me.
Doughs were a little bit too dense, I think they just need a longer rise (maybe bread flour instead of AP flour?). Great flavor though.
—Paella! Made with chicken, italian sausage, chopped clams, and shrimp.
I also served it with an awesome sangria, but the pictures were all blurry and not worth showing.
But here’s how I made it:
Slice 1 tart apple, dump into a pitcher. Add 1 cup of orange vodka, let it sit. Add ice. Throw in a bottle of sweet red wine. Add 2 Tbsp. lime juice & 1 Tbsp. lemon juice to cut that sweetness. Stir and enjoy.
